Why can't Evernote not even process tabs correctly?

I am trying to copy really simple text to Evernote. The text has single tabs to separate different parts of text. Like this:

Item 1 [TAB] Info 1 [TAB] Info 2 
Item 2 [TAB] Info 3 [TAB] Info 4

However, in Evernote, it results in:

Item 1 [TAB] Info 1 Info 2 
Item 2 Info 3 [TAB] Info 4

With lists longer than two lines, it results in a huge random zig-zag, which takes a few minutes to put everything back to how it was.

Why is this, and how do you fix it?

Depends where you're copying from and whether you tried match formatting / simplify formatting or remove formatting...
