My suggestion is to have checkboxes disappear, struck-through, or change to a lighter font when completed. This could be configurable in settings. Link to comment

I think the OP was talking about checkboxes within a note, rather than reminders in the note list. Link to comment

My point still valid though - it's possible to have one item = one note and use the reminder system in that way by hiding completed items. Don't think (strictly MHO) that Evernote have any interest in adding more individual task management tools, although a lot of clicks on this topic's top left counter might persuade them to look again.
