You can if you choose to export all your Notes to ENEX files, and do the process manually for each backup.

Just be sure to understand that an ENEX backup is not a full 100% backup of all aspects of your Evernote data. The limitations of such a backup are nicely documented by JMichael within the link he posted above.

I'm duplicating your posting because it is so important.
I also use an ENEX export (and an HTML), and I know the limitations
You do not want to find out about those limitations after an issue when you're trying to use the export file.
I also have conventional backups (Mac time machine)
