notes without syncronization

Hi all,

 

I'm a little paranoic about Internet security, so I would like to know if there is some kind of configuration that could enable notes or notebooks to be unsyncable (working like an offline storage).

 

Haven't seen any solution around, sorry if this topic is already answered.
