(doing both should be optional) The default behavior of Evernote is to put new notes into your default Notebook. Many of us use "Inbox" as the default NB. You could choose to think of the "Inbox" as being your "no NB" notes. IAC, it has no negative impact on you for all Notes to be in a NB. If you want to ignore NBs, just choose the "All Notes" choice in the dropdown list.
