A number of ways:

From the Windows and Mac desktop clients, you can export your notes database in several formats: HTML or Evenote's ENML format (proprietary XML-based). Or you can copy the actual notes database to another location.

 

There's at least one cloud service, CloudHQ, that allows you to save your notes in cloud storage, in several formats.

 

Of course, your notes data are already backed up on the Evernote servers.
