With the New Look after the last update in the lost of Notebooks first are mentioned the books recently established.

This is not quite correct, there are the notebooks were have been added new notes.

But how can I hide this list of Recently established notebooks?

The notebooks are just labelled "Recent Notebooks". What "recent" means is not explicitly stated, but it's most likely the most recently visited. For example, I can navigate to a notebook not in the list without viewing any notes in it, and later on that notebook will replace one of the ones in the list.

I don't know of any way to remove the list. It is useful, and seems to have a maximum size of 3.

Inn the German version ist statet "Recently etablished" resp. "recently created" "Kürzlich erstellte Notizbücher"

That may be a mistranslation, then, as this and other Evernote clients that I am aware of use "recent" to mean recently used, or recently referenced. I'd file a support ticket for that.
