Killing accounts that you never wanted

I have just got a new Nexus 5 -

 

1) when setting up, I accidentally hit 'create account'

2) Evernote then sets up an account using my gmail account but doesn't ask me to set up a password

3) I start to receive marketing emails

4) I unsubscribe from marketing emails but to kill "vital account emails" you need to log-in and change settings?

 

 

How do you log into a account you never wanted without creating the account and therefore defeating the purpose of not wanting to create the account?
