In part this is due to the fact that 1) either the video would have to be downloaded and stored in your Evernote database, or 2) it would have to be "embedded" in your note, which would then require an active connection to view, and at the moment that sort of embedding of any content is not possible in evernote notes. You could always capture a screenshot of a frame of the video as a "poster" and paste that into your note along with a link to the video. A little clunky but thats about all I can think of for now!
