Evernote on mobile devices - what's on the device and what's not?

I know this is a real basic question, but...

I've just started accessing EN on my iPhone. I notice that when I don't have internet access, some notes have full content but others do not and I get a message to say that there's no internet access. What content is actually on the mobile device vs needing internet access? This becomes important when travelling and I'd like to have some content but don't want to access the internet. Thanks. :blush:

So if I have a premium account, which I do, what settings must I enable to download more than headers?

In the settings area (top drop down in left pane where your email address is listed), offline notebooks.

Thanks. Is this something that I can do in the web version? Or does it have to be done through the desktop program?

Neither. It's done on the device.
