How do I do a 1-time move to bring the contents of my existing Windows evernote database across to my Mac ?

If your notebooks are all synchronized to the service, you just need to install the Mac software and sync to your account. Your Mac should automatically update to an exact match of your Windows computer.

If you're using Local notebooks, you'll need to select each and use the Export feature to export the notes to a file that you can carry to the Mac.
