Try exiting Evernote completely when the sidebar is switched off - including shutting down any system tray icon - then log back in. The saved setup should leave the sidebar defaulting off.. though if you inadvertently hit a function key that might toggle it on and off...

I don't think I'm the only one expereincing this problem. Thanks for for you help + commenting on my post.
