Working with someone today getting them set up, they created a note with encrypted text. The hint they used was the password, they did not realize it would show like it does. How can you change the hint"

That's a great question. Hints are not very safe in today's world of social websites. A lot of personal info can be gleaned from Facebook, Flickr, LinkedIn and similar sites.

So I have been changing my hint questions to actual full blown passswords (long random string of characters) and storing it in my LastPass password manager.

If I have to have to use the hint system, I will not have an easy answer to questions like "What was the color of your first car?" or "What was the name of your High School?"

I recently changed the Hints for my bank account and was surprised how difficult it was. I had to first talk to the bank manager who then had the security team cancel my original hints and allow me to enter a new ones.

I hope Evernote has an easier method.
