Sharing a Notebook/Getting it Back

I have created a notebook for my students that has a series of assignments in it. It is based on around a problem...Not to toot my own horn, but I think it is way cool. The problem is "Is it better to lease a car or buy a car." The first assignment is to have students interview someone who is leasing a car. They have to write four open ending questions and actually tape the interview using the recorder on Evernote. The second assignment involves students coming up with algebra equations to help solve the questions. The third assignment is for them to write a paragraph with their finial results.

HERE IS THE PROBLEM:

I have is all nice a neat in a note book ready to share with them. My thought was they would do their work right in the note book, rename and share it back with me for assessment. When I tested my theory I find that you can't share or rename or copy a shared notebook. CAN ANYONE THINK OF HOW TO HELP ME? I PROMISE TO BE YOUR BEST FRIEND FOR LIFE!
