I am having trouble finding an answer to this question, as I don't have any idea what the feature was called.
In an earlier version of Evernote, when you would search (either by typing in the search box or selecting various notebooks and/or tags) a bar would appear at the top with the various search terms and you could remove certain elements by clicking the "x" next to that term. However, that is no longer appearing for me and I can't find a setting to make it appear.
This June 2011 Evernote blog post has a screen capture that shows the bar I am talking about, but I think that Evernote was updated since then...
