For most of the consuming notes function, the fullscreen mode in Lion is great. It keeps your notes handy and also keeps Evernote out of the way of the rest of the apps.
However, if you've become used to creating notes in-context with other work by using the hotkey to open a new note in the space you're working in, fullscreen just doesn't work: the new hotkey-created note opens in the fullscreen window, not in the space where you're working.
Would it be possible to have the hotkey start (or be consumed by?) a new process ("Evernote Note Helper" or somesuch) that allows you to create a note in your current space?
