Is there a way to copy an internal note link, paste it in an Outlook email or task, and have that link open the Evernote App, as compared to evernote on the web? I know there is a keyboard shortcut but its not really a shortcut if I have to look it up each time: Thanks.

If it can be edited (some can't), you see the edit option in the little menu. Click on the edit option, and press the key combination you want to use instead of the default. There are other options to restore the default, or deactivate the shortcut. Be aware that if the shortcut is used by another app, you can create a collision. This is more critical on global shortcuts than on local ones. A new mapping is individual to every users setup, because installed apps differ from system to system. 1
