images show as placeholders on Macbook Air M1

All the notes that I created in the Windows version and that contain images: the images do not display as such, but as shown in the attached screenshot.

This strongly suggests that Evernote for Mac still fully supported by M1 machines.

If this is an Evernote bug in relation to M1 machines, is there a timeline for the resolution of this?

There is no user control over how pictures display in general. I agree they usually simply show.

Is it a picture or a pdf ? If a picture: What type of picture (JPG, PNG, …). When you save the picture to the drive: Does it open normally ?

This bug has been occurring on and off for some people, seemingly across all platforms, for at least a year. It just started impacting me again on macOS and Android. I wrote more details in a long-running thread for Android:
