Can I keep my data local only?

I no longer have a need for keeping my Evernote data on multiple devices, so I'd like to keep it all on my computer, and not have any of it online. I know that Evernote discontinued the concept of "Local notebooks" some time ago, but is there any way I can do this now?

Hi.  To tide you over,  Evernote legacy is still a thing - and still does Local Notebooks;  but even then you need internet access from time to time to log in.  In v10 it's just not possible I'm afraid.  Enjoy legacy while you can,  and maybe look for something else meantime.

Thanks - I've archived my Evernote notes and closed my account. It used to be quite a good app. But when it stopped being searchable by Spotlight it lost its utility for me.

I'm sure it still serves a lot of people just fine, and I wish it well, but it's not working for me anymore. I'm now using Apple Notes and DevonThink. They suit my workflow much better.

I understand Devonthink for storage/organization

How does Apple Notes fit in?   
For handwriting support, I use the Notability app; with the documents stored in Devonthink
