What will happen, if I cancel my subscription?

No, you will not lose the content of your notes   
The free level has a note size limit.  You can view oversized notes, but not edit them

That's for Plus users (if there are any still out there) trading up,  and those in free accounts who have not recently been subscribers.  If you're just downgrading to get the discount I suspect you'll be disappointed.

Why do you think?

I just read "you must: ... use Evernote Free" what I will do once I downgraded.

I don't see any restrictions being a former subscriber...

I would say you are trying to cheat.

But you can give it a try. Let your subscription expire, no data will be lost. You will have trouble with your devices, so make sure you revoke access for all but 2 BEFORE you downgrade.

And then give it a try …

I think that at least for a significant waiting period, you will not qualify for the discounted rate.

But you will always be able to subscribe for the full price again.
