Having problems getting a document from Scansnap into evernote to a desinated folder

I used to be able to just have Evernote set to a destination and scan.  Now everthing goes to the inbox?

Use the import folder feature.

You can set up several import folders, each linked to a different notebook.

If you use the most recent ScanSnap Manager you can still create a default scan to the default notebook.
