1. The copy link for Shareable Link is behind More Sharing Options link
2. As a result I can not click the Copy Link
3. When I try to click Copy Link it takes me to More Sharing Options
4. Does anyone know a work around or how to fix?

Here are 2 option for you to try:

Hold the phone in landscape mode, not portrait. It gives the link more space to the right, reducing the height.

You probably have set a pretty large general text size on your phone. It blows up the link size. When you reduce this setting (on iOS it is in settings, display & brightness, text size) it will make the link show smaller.
