Date not formatting in v. 10.13.x

Mac user (Big Sur). Dates used to follow system settings (I prefer YYYY-MM-DD). Since late 2020 (I think), they default to Month Day, Year. Not what I want. Any suggestions for a fix?

No settings, AFAIK no way at the moment. It probably takes the region and adjusts the date to what is the standard in that area. Here in Germany it is DD-WW-YYYY.
