EXPORTING FULL DATABASE FOR OFFLINE USE ON MAC-No option to do so!

Greetings Evernote Tribe.

I have tried time and again to export my entire database to my desktop Mac for offline use. I have almost 17,000 notes, compiled since the inception of EN. A catastrophic data loss from the EN server would be just that. CATASTROPHIC! I want to maintain the current structure and all of the notes/notebooks.

Am I asking the impossible?

fyi  The app automatically maintains a local database for offline use 

I use the Legacy product and am able to export my entire database   
I use the html format.    
To maintain the notebook structure; separate exports are required for  each notebook   
I have this scripted on my Mac as part of my data backups; a weekly full export

Thank you for your timely response. I'd love to know how you have automated the weekly backup on your Mac. This question comes to you from a highly computer savvy person, but not to the depth that you seem to be!

Also, can you let me know how or if EN is being censored at all?
