How to keep menubar from disappearing in Mac Big Sur? and other stupid questions...

I'm new to Evernote, so forgive me if this is a stupid question.  When I open the desktop app the toolbar/menu bar thing at the top of the page keeps disappearing and only reappears when I move my mouse over the area.  How do i keep this "visible" all the time?

Also, when I open a note, the rest of the app disappears making it hard to navigate around.  Are there any shortcuts for closing the note and going back to the notebook you were in before? And to be able to move from the notes list directly to editing the note without "opening" the note?  Would really be grateful for a user guide video for the latest version, as I'm finding the basic navigation stuff hard to get used to and find relevant guidance for.  thanks!
