Since the EN edition is gone from the list of features, it probably does not make sense to continue with the EN edition on the ix500 scanner.
Luckily the ix500 EN edition can be converted to a standard ix500 by upgrading (it is more a „sidegrading“) the firmware. Just one hint: Once it was loaded with the new firmware, there is no way back. The special features of the EN edition software are then gone, no way back.
About how to make the transition, and where to get the necessary software you can go to this page:
Probably many already have done this, because when upgrading the Mac to Catalina, the ScanSnapManger software stopped working, and was replaced by ScanSnap Home. Fujitsu is now developing an new, 64bit ScanSnap Manager software for the Mac. However the first version does not support any cloud services.
