Evernote is most definitely a cloud service, with the master version of our data stored on the Evernote servers
There are benefits;    
- web access   
- data backup

If you want to use your own storage, you are simply wrong with choosing EN as platform.

In addition to the functions mentioned by @DTLow, there are server based services like OCRing of pictures and pdf, building the search index and the e-mail-interface. EN would not be complete without these functions.

For Mac users there is DEVONthink as a self hosted alternative. Or check out the NAS suppliers like Synology or QNAP. They offer their own solutions for self hosted note apps. You can build it yourself if you want (and know how to). In general you are responsible for these solutions yourself - many things provided by EN as part of the package are on your own disposal: Backup, external access, mobile apps, e-mail, OCR etc.
