I used Folders in Evernote and send alot of emails direct to the folder for example:- someone sends me a quote for a mortgage and I send the email to Budget @Personal Finance.  Sometimes the title of the email subject will just be Personal Finance and I just press send to Evernote.  What keeps happening is that even if I put the @ symbol, my Evernote seems to have a favourite default folder (not @Inbox which I also use) but a random folder which has nothing to do with anything.  It puts all sorts of stuff in there seemingly without any connection at all (it's for short stories).  How can I stop it assigning emails that it doesn't know what to do with to this folder?
