Choosing the correct version of Evernote

I'm creating about 2-3 dozen notes that i'd like to share with 1-2 people for collaboration. 
 

It all needs to sync and be accurate. 

Questions: 

1) Is the last person who saved their note the one who overwrites everyone else's? 

2) Can I do what I need with Evernote basic or do I need pro? It's expensive and I want to minimize costs.

How big are the notes?  Each edit requires a full upload of the note.  The account  limits are documented here https://help.evernote.com/hc/en-us/articles/209005247-What-are-the-system-limits-of-Evernote-

You may be ok, but to be safe the notebook owner should have a paid account.

For shared notebooks, uploads are charged against the account of the notebook owner.

So it might be ok if only you have a paid account.

No specific version or device; the shared notes are available to all accounts.

I'm not that familiar with shared notes.  
Things will certainly blow up if all users are offline and update the same note at the same time.  
For general online use, the sharing works well but it's not perfect and as robust as some other services like Google Docs.
