My recovery method for lost data is to restore from backups

I have personal backups, and Evernote has a Note History backup feature

Access to the Note History backup data is a paid feature, but you can subscribe for a single month

There is a recovery function, though it does fail sometimes.  But you have to Ctrl-Z or Edit-Undo right away if it is going to work.  Or shake an iDevice.

Welcome to the forums! What system are you using for Evernote--Windows, Mac, Android, Web, etc.? Undo capabilities vary, but I think they all have some. For instance, in the Web interface there is no Undo button; but you're typing using your browser, and its normal undo-typing feature should work.
