I'm confident Evernote is not mining our data and Google/Facebook don't have access

There's no third party access, unless you've authorized access (see Account Settings > Applications)

I do want to make sure but I can't find "Applications." Are you talking about going to account settings on mobile? PC? Or the website? Either way I don't see it on any of the three.

Under Account Settings on the web, drop down next to your user name in the upper right.
