On the iPhone and iPad you can select a tag, and then see it filter other tags also associated to that note. You can then select specific tags so you really drill your search down to a list of tags.
However, on the Desktop version, whilst you can add tag:tag1 and tag:tag2 in the search notes, you must know the associated tags already or at least have an idea.
It seems the iPhone and iPad option does your thinking for you in the search which is preferable.
Having used Evernote for 6 years, it seems the key to a really good resource chest archive of quotes and articles is TAGS, but the TAG search functionality is limited and not smart to use.
