I own an enTourageeDGe and Evernote runs on it, however it runs in a small window as if it were a phone screen. Are there plans to release a version that will scale properly on a large screen device?

Thanks for the report. We just hired two new Android engineers and are working to expand our Android support. I don't have dates on when we'll do something with tablets, but Android is definitely a high priority.
