How to force a scan in only black and white ?

I'm scanning simple documents, but some of them have little images in color, scannable automatically respects the color when creating the PDF files, and this is increasing significantly the file size. How can I force scannable to scan in pure black and white??

Hi.  I don't believe there's a setting to select the color.  Do you have the standard Evernote app installed on your device?  Could you use pictures from your camera roll to send to Evernote?  About the only workaround I can think of would be to edit the pics to B&W and then send them to Evernote.
