please tell me if evernote can do all these, if it can't it's ok, i just need to know

**minimal requirements**

* can make bullet points easy like if you type '* [space]' then it would make a bullet point
* what i type into the software is responsive to the size of the window (going to keep the window/app like a 'sidebar')
* is easy to hide/expand all info under a higher-level bullet point
* can bold like a regular word doc so you can see the bold easily, so no markdown (auto-bold the first line/bullet point is a plus)
* minimal UI (prefer completely clean UI)

site, app, anything, only the above matters, everything else is irrelevant

Which Evernote application are you using? WIndows? Mac? Android? iOS? Web?

Have you actually tried Evernote?

The Windows application does have a bullet point shortcut such as you mention ('* '). No Evernote client that I know of has the ability to collapse/expand bullet points. I don't know what your other points mean.

Best way to test Evernote features on any device is to download the free basic version and try it out...

Yes to points 1, 2, 4. No to point 3. "Minimal" is a matter of opinion, of course. Below is a screenshot showing the window as narrow and minimal as I could get it (by customizing the toolbar and dragging everything off of it that I could). It would probably be best to try it out and see if it works for you.

Another unsatisfying response here I'm afraid..  there are various alternatives to Evernote,  but the 'best' option is something that only you can determine by trial and error.  I doubt there is one application that will meet all your requirements,  but you may be prepared to trade a better bullet editor for the ability to keep the app floating as a sidebar.  Although I've tried several alternatives,  I didn't use them to the extent that I can complete your comparison chart.  Try these links..

Evernote is minimal compared to, say, MS Word, but some people want more, some people need less. The best way to find out is to try it out. there's a lot to go through so not sure what's the best at the moment, but quick examples are:
