So I would like to be able to open a new note (maybe using a template) that has the Grid already set to a certain size, which is no big deal, but then be able to right click in a box and add Windows post it notes in each box i wanted and have them save that way. See the attachment.

Hi.  Evernote just isn't set up to do this in any practical way.  Try Card Desk - http://www.carddesk.net/ - put your various items in separate Evernotes and add them to the desktop.

I see no problem with adding an image of post it notes to your grid

They would be images; not live documents

I could do it on my Mac by right-clicking in a box and using "Capture Selection From Screen" for each image

Do these have to be Windows post it notes.
Evernote plays better with office/iwork documents
On my Mac, I can insert a Pages file in each cell, and display it inline
