Hi! I am getting ready for my year and am trying to figure out a few issues I am having. I have 165 students. I want each of them to have a linked notebook. I would like to organize each linked notebook into their class periods in my notebooks. Is this possible? How do I do it if it is?

It's possible but I wouldn't recommend it. Evernote's collaboration features are very much in their infancy and managing the numbers of users you are talking about will be painful and time consuming.
There have been fairly strong hints that more effective management is on it's way, but no timescales have been given.
In your shoes, I'd be looking for an alternative application maybe a wiki like Confluence from Atlassian.
