(BTW: I am running this on an android, Optimus Elite.)
However, I have several problems... I don't think it's me, but it could be.
First, not really a bug, but usability, it took me until today to realize that you can edit a profiles details by clicking the vertical 3 dot's or the plus. Also, I'm not sure the difference between the 3 dots icon and the plus icon when you are viewing a profile??
I created a notebook called hello in my evernote and set the app to use that notebook.
Here is what is happening.
1. The first two people seem to have gone into my default notebook. How do I move them to the Hello notebook.
2. One of the first people added to hello via, pass the phone seems to show up twice. I "think" this could be because maybe after taking her pick she pressed the + icon to add an email address, I'm not sure. She is also in my default Notebook and not the Hello notebook. how do I "merge" those entries. I only seem to see a "delete profile" option not delete encounter option.
3. The next person after her also went to the default notebook, but I only have one pic after him. How do I move entries to the Hello notebook?
4. The next person entered is actually in the hello hotebook. Actually, I think this encounter I used "enter yourself" because he handed me his card, so I just typed in his email and name and snapped the pic myself. His profile seems to be the first correct one if I look in evernote rather than using the app.
5. Starting with the person I added (in 4 above) every person that is added now gets EVERY email address of the profiles added prior to theirs.
6. The mosaic shows one persons pic for 3 profiles. (one person declined to take a pic, not sure if that is messing this up.) However, in evernote the correct pic shows for each person.
7. When I click on a pic in the mosaic it goes to that pic/profile for a few seconds but then it switches to show the most recent encounter/profile I have in the phone. I just did a fake one to see if that is true.
So, what do you suggest I do to fix this? Can you edit these profiles in evernote? Evernote web won't let me.

The vertical 3 dots are a new convention introduced with Android Ice Cream Sandwich that holds a menu of additional commands. As you discovered, on a person's profile, the vertical 3 dot menu holds commands for Editing the person's contact information, linking to their contacts entry on the device or deleting the whole profile. Tapping the "+" adds a new encounter to the profile (i.e. you're meeting the person a 2nd time or 3rd time). This will add another encounter to the person's profile with the current date & time and location.
1. The first two people seem to have gone into my default notebook. How do I move them to the Hello notebook.
By default Evernote Hello encounters go into your default notebook. If you want another notebook, look under the Owner Profile (tap the Hello icon on the upper left) and then tap the gear icon under your name and picture. On the Settings page there is a button labeled "Notebook for Encounters" from this you should be able to the notebook you would like to use to store your Hello Encounters.
Another Android Ice Cream Sandwich convention is to use a small right corner triangle for a context specific menu (see attached pictures). Within a profile under this "spinner" menu you will find the command to Delete a specific encounter for this person. Another method is to just go into the Web client and delete the note with the Hello profile that is the duplicate.
3. The next person after her also went to the default notebook, but I only have one pic after him. How do I move entries to the Hello notebook?
You can move Hello notes around just like any other Evernote note with any of the standard Evernote clients (Desktop, iPhone/iPad, Android, Web)
This is how information from Evernote Hello is stored in Evernote. Each Hello Encounter is an Evernote note. With each successive encounter of the same person, the information of the previous encounter is copied into the latest one so that the latest encounter always has the most up-to-date information. This latest encounter is the one that is displayed as the main profile within Hello.
6. The mosaic shows one persons pic for 3 profiles. (one person declined to take a pic, not sure if that is messing this up.) However, in evernote the correct pic shows for each person.
I'm not sure what you are seeing but if you meet the same person 3 times with Hello and that person declines to take a new picture on the 2nd and 3rd Encounters, we will reuse the picture from the 1st encounter on the 2nd and 3rd. We do this because we always want to give you a face to go along with the name of the person to help you remember them more easily.
7. When I click on a pic in the mosaic it goes to that pic/profile for a few seconds but then it switches to show the most recent encounter/profile I have in the phone. I just did a fake one to see if that is true.
Yes, we do this because even though you've met a person multiple times over time, when you tap on their picture in the mosaic, regardless of where it is, we want to give you the most recent picture and current information of the person to allow you to interact with them via email, phone etc. If your intent was to view their older pictures, within the profile you can scroll down to the encounter you are interested in and tap on the picture to view it in full size.
So, what do you suggest I do to fix this? Can you edit these profiles in evernote? Evernote web won't let me.
Unfortunately you cannot edit Evernote Hello and Evernote Food notes in Evernote at the moment. We are working on defining the best use cases for managing these notes in the generic Evernote clients and will roll out functionality to edit these notes in a future release.

You aren't reading what I am typing...
It was NOT the same person being met several times. It was different people. It was acting like I was adding an encounter from a persons profile instead of a new person from the mosaic.
As I said, if I look in evernote I see the individuals each with their own pic. Evernote Hello on Android shows the same pic for several of them.
Once again... if I click + on the mosaic screen and add a person... it gets the email I enter for that person, plus other emails for other people... you can see this by looking at a fake encounter/person that I added in this screen shot from my evernote for windows:

BTW: Support is looking at this... I expect it may be because I change the notebook after I had entered some encounters and Hello didn't handle is correctly. As far as using ICS "standards" on a Gingerbread phone... ok.... but that 3 dot thing just wasn't obvious.

Because Android is a fragmented platform (not all users are on the same version of the operating system), apps must conform to the design standards of the newest version while maintaining compatibility with previous versions. These are Google's official design standards for modern, updated apps; Evernote (or any company) has little choice in the basic iconography if they wish to be seen as a reputable app.
As for your other issues, I'm afraid I can't offer any advice. I haven't had any issues myself but please update us when/if you get this figured out!

I believe we have a fix for your issue in the latest release that just went out yesterday. Please download and give it a try. This won't fix your existing records that were accidentally merged because we have a policy not to touch your data. However it should fix any future encounters you add to Hello. I should have a support knowledge doc to support in a few days to show how to fix up the merged encounters. Hope this gets you going on Evernote Hello again.
Thanks for the detailed feedback and questions.

Here are the instructions. There are a number of steps but hopefully this will help you unravel your mixed contacts.
When users are added, their email and other contact information are merged into a single profile.
This bug occurred because Hello Android incorrectly treated an empty twitter account "@" as a real one and merged information from multiple people together based on this empty twitter account. To separate the entries, follow this process. Please read all steps before beginning.
- Back up the merged records for safe keeping
- Using desktop client - select the merged Hello notes
- Export notes to Archive
- On the Hello Client:
- Write down or screen shot the merged contact information for reference
- Tap on one of the people that have merged information
- Edit the encounter by tapping on menu button in upper right of screen
- Delete the email addresses that do not belong to the person
- Add a twitter account for this person. Use made up data if necessary (e.g. "@zzz")
- Tap "DONE". If you tap "ENCOUNTERS" tab, you will still see wrong grouping (expected)
- Tap Hello icon at upper left of the screen to go back to Mosaic screen
- Tap on the person image you just edited
- The person should be separated from the others
- Repeat for any other merged encounters but use a different twitter account for each person you edit
- When all the people are separated correctly, correct the information for this person based on the screen shot or your written notes. You can safely delete any dummy twitter account information as needed at this point.
- If you make a mistake and cannot undo, restore from your backup of the enconters
- Using the desktop client - delete the merged Hello notes
- Import the notes archive you previously saved

It's not great loss if I can't save these. Using it was only a experiment to see how many people would actually do it.
What I don't understand is why if they show up as separate items in Evernote, Hello doesn't know they are separate items.
How can I just start from scratch. If I clear all data from the phone and delete all the Hello notes in Evernote... will it start from scratch?

Sorry my instructions aren't working. If you don't care about the data, then you can use any of the Evernote clients to delete all the Hello notes you don't want to start from scratch. You don't need to touch your phone, just sync down the changes from Evernote when you are done deleting the notes.
