Is there a way to share multiple notebooks with a user by sending him/her only one invite (as opposed to sending one invite per each notebook you want to share)?

Hi Camille, welcome to the forum 
I don't believe that this is an option right now. I am not sure it would ever be possible, since changing a notebook status (to shared) is done on a per-notebook basis.
