After the user has authenticated (OAuth) with the Web API, is there a way to get the user's Evernote E-mail box address, so my app can send notes to their account? I'm trying to save the user from having to hunt down and cut and paste their Evernote E-mail address into a form fill field.

No, there's no way to do that today. Before we expose this email address to third party apps, we want to make it clear to users that they'll be sharing this information, and allow them to opt out of that permission if they choose to do so.

Ok Seth, good to know. In the meantime I'll just ask them and tell them what it will be used for. Then they can decide whether or not to provide it.
