Brandon at Parenthetical.com put together a great blog post and video showing how to hack Evernote as a loose grade book.

By using Evernote's email address and the ability to designate notebook destinations and add tags based on the subject line http://blog.evernote...ust-got-better/. He figure out some great hacks to allow students to submit their assignments directly to teachers (specific notebooks and tags included) for easy review.
